Recipe: Yellow Tomatoes Gaspacho

I harvested the last Banana Legs tomatoes: they're sweet and tasty tomatoes, and they're golden yellow when ripe. I prepared a classic gaspacho recipe, using yellow or orange ingredients to make it yellow.

Chilies and tomatoesMy fresh harvested ingredients, Banana Legs Tomatoes and some mild chilies: a White Paprika, Aji Benito and a Numex Suave Orange.


Yellow Tomatoes Gaspacho

Yellow Tomatoes Gaspacho

Ingredienti
3-4 yellow tomatoes
50g sweet or mild chili
1/2 small cucumber
1 tablespoon olive oil

Preparazione
Remove stem and seeds from the chilies.
Blend all ingredients until smooth, or leave a little texture.


MeatballsA tip for non-vegetarians: I served the yellow gaspacho with some fried mini meatballs.

Wow - those are beautiful veggies. I don t think I ve ever seen yeloow tomatoes or white peppers like that! No wonder your gazpacho is so gorgeous. :) Thank you for sharing it with WHB this week.
