I love my precious muffin pan, that I use not only for muffins but also for recipes like the chickpeas flour chips or the potato rosti with dill.
It's starting to look old... but in good shape enough to create delicious muffins for my family's breakfast.
Lemon muffins with poppy seeds
Ingredients
Makes 12 muffins:
200g all-purpose flour
50g durum wheat flour
120g sugar
2 eggs
200g Philadelphia cheese
100ml milk
1 tsp baking powder
1 tsp baking soda
zest from half lemon
1 tbsp poppy seeds
Directions
Beat the eggs with the sugar, then add the cheese and the durum wheat flour
Dissolve the baking powder and the baking soda in the milk and add to the batter.
Add the all-purpose flour and mix well.
Spoon the batter into the buttered muffin pan and sprinkle each muffin with poppy seeds.
Bake in preheated 180° C (356 F) oven 20-25 minutes, until golden brown.
