Recipe: Roasted pepper hummus with Thai basil

Celery mint chili and basilLike Mozzarella in carrozza, hummus is one of the dish that I often prepare, trying always different recipes.
This variation uses the fresh harvested herbs in the picture, coriander seeds and a roasted bell pepper.

Roasted pepper hummus with Thai basil


Ingredients
1 red bell pepper, roasted
250g cooked chickpeas
1 tsp. coriander seed, ground
2-3 leek slices
1 celery stem
3 tbsp. grated parmesan
2 tbsp. tahini
1 green chili
some thai basil leaves
some mint leaves

Directions
Blend all ingredients in a food processor until thick and creamy.
Serve at room temperature, with toasted pita bread.
