Recipe: Hot couscous salad

Corleone Tomato & Jalapeno JaloroThis in the picture is my first tomato ever, a Corleone Tomato harvested from my rooftop pots.
I harvested also a Jalapeno Jaloro: these chili peppers are big, fleshy, tasty and mild... I'm really enjoing them.


I added a bunch of basil and prepared this couscous salad.

Ingredients
Serves two:
1 Corleone tomato
1 Jalapeno Jaloro
20 leaves of fresh basil
120 g couscous
olive oil

Directions
Cook the couscous following packet directions. Season with minced basil and olive oil.
Add the tomato and the Jaloro cut into slices and let set in refrigerator before serving.

I harvested only two Corleone tomatoes this year... but their taste was worth the effort
