Last month the wild thyme produced soft new shoots that were about to bloom.
Harvest the thyme during bolting and flowering: cut the green shoots, wash and dry, then place them in a shady and ventilated spot.
Once dried, you can crush the leaves or keep the shoots whole, so that they can be used for bouquet garni.
The thyme of these pictures is wild thyme, but the same recommendations apply to other thyme varieties: regular thyme (vulgaris), lemon, variegated, silver...
