Recipe: Green peppercorns burger with sage

Maybe you already know, but I have a thing for burgers. I'm not talking about the fast food ones, but the home made burgers: meat, fish, vegetarian... I always like to try and create new recipes.
This recipe is made with beef, served with the Caramelized Onions and a mint sauce.

Green Peppercorns peppercorns burger with sage
Ingredients
Makes four small hamburger (or three big ones):
350g minced beef
3 tbsp green peppercorns in brine
6 sage leaves
2 tbsp grated Parmesan cheese
100ml single cream
juice of 1/2 lemon
3 sprigs of mint
wholemeal bread, toasted
Directions
Rinse and drain the green peppercorns. Cut the sage into strips.
Mix the beef with green peppercorns, sage and parmesan.
Shape into four burgers and fry them in vegetable oil.
Meanwhile toast the bread and mix the ingredients of the mint sauce: single cream, lemon juice and chopped mint.
Serve on a toasted bread slice, with Caramelized Onions, the mint sauce and fresh greens of your choice.
