Storing herbes de Provence

Spices and aromatic herbs mixtures

During my personal harvest festival, before my summer holidays, I harvested many aromatic herbs to store them.
I dried some of them in a mixture, to have herbes de Provence (Provençal herbs) for the next year.

Herbes de Provence, still freshThere are many versions of herbes de Provence. I choose: basil, lavender leaves and some flowers (they have a strong aroma), savory, wild thyme (the pink flowers in the picture), marjoram, mint, sage.

You can also add: fennel, bay, tarragon, oregano, rosemary.

As usual: discard the stems, wash and dry the herbs on a kitchen towel, put them in a dark place for a week.

I crushed them coarsely with my hands before putting them in a jar: the aroma was delicious.

Suggested ingredients: basil, fennel, lavender, savory and thyme. Many add also: bay, tarragon, marjoram, mint, oregano, rosemary and sage.
